Hello again!

Wow how time flies! It has been 2 weeks since school started and Greg moved out to attend UNI.  We are all adjusting to our new routines.  Taylor and Jenna have totally reworked the upstairs bedrooms- now that they only have two of them they did it their way.  Greg is settled in at school- and had more room than we thought.  It was organized when we stopped up the first weekend, but who knows what it looks like now!

This weekend Taylor will confirm his faith at our Lutheran Church.  This marks the end of a three year program for him and the final of my children to go thru this process.  It is a proud moment to watch a child confirm their faith in Christ in front of the congregation and the Lord.  He had to write a faith statement that tells what he believes and why.  This is something that not only goes into a book to share with everyone but he also has to read it in front of a group of people.  A day of celebration!

Rhubarb

Rhubarb happens to be a family treat around here. Unfortunately we don't have enough good sun in our yard to grow a good crop. So we rely on friends and family for the bulk of what we eat. Oh well! Yesterday, Jeff, Jenna and I went out to the farm and gathered rhubarb there. It may be the last time we are at Jeff's grandparents farm as it has been sold. His mom advised us not to take all of the rhubarb- not a problem! I was surprised to see how much was there. It was a stock I had not known about! WOW! Anyway, here are some pictures of what we gathered and the farm in general. Jeff had lots of good times there as a child. I am sure he has many memories! Enjoy!

Roots part 2

May you roots go long and deep and also widen everyday.  Just as a healthy plant, we need to have a growing root system to keep us healthy and thriving.  The other day I pulled out a basil plant from our garden.  The frost had made the leaves and stem turned brown and crunchy.  It didn't appear to be alive anymore and had become an eyesore in the garden.  As I pulled it out of the ground I was amazed at how tightly it was stuck.  The dirt was trying to pull it back.  I really had to tug and use my hands to loosen the dirt around it.  When I finally freed the plant from the dirt and saw  the root system being freed, I gasped.  It ran almost all the way across the raised garden bed.  The root ran in all directions. It wasn't just one piece but many pieces interconnected.  So how is this plant like a human?  We also have a root system.  One that is started for us in our dna. It continues with our family heritage. Added to by our experiences and influences. Increased by our choice

I miss the crunch!

Anyone else miss the crunch of a potato chip?  I love potato chips but don't like the unhealthy version. So I am on a quest to replace my chips with a healthier version.  Tonite I tried to make some out of sweet potatos.  No oil, baked not fried.  It's gonna take some tweaking if I am making them for more than just me.  Ok, I burned most of them.  However, some survived and I had them for a snack.  Here is the recipe: 1 scrubbed and washed sweet potato. Salt Pepper Water Slice the sweet potato thin (I used a mandolin ) Put them on a parchment paper lined baking sheet. Sprinkle with water Salt and pepper to taste Bake in a 350 degree oven for 20 minutes After 20 minutes, check them and flip them Bake 20 more minutes.  Watch them! Cool and store in air tight container If you have any leftover.
